I'm hoping that you get a great result from this because my daughter is similar! Firstly, I don't think you're being harsh. I did something similar with my eldest when she was perfectly wee-trained day and night but insisted on a nappy for her poos. I bought a packet of cheapies and then when they were finished, that was it! She held on for a couple of days and the first one was quite a performance but after that she never looked back. There comes a time when all else fails that some harder actions are called for

My second is in the process of training but also has a bladder of steel. We have been taking a break because it was doing my head in - one day she went 6 hours without a wee Of course, then when it comes it's a flood and there's no stopping it to get even part of it in the potty or toilet. She goes to daycare 1 day a week and they are happy for me to bring in knickers this week. I need to psych myself up again as she needs to have some basic skills before moving up to the kindy room next year. I figure that once it clicks, she should be pretty good with that kind of control, just need to find the key!
