every night in some sort of permutation - a lot of the time i have a vegie soup for starters if i'm home on my own - then whatever i drag from the freezer for dinner. all our frozen meals are loaded with veg though... summer is different - salad almost every night. and if i bbq, i bbq more veg (spud, sweet spud, carrot, corn, zucchini) than i do meat (it's mostly for DH).
as to "meat and three veg" type meals - only ever when DH is home. i rarely eat red meat when i'm home alone, so i get my veg from soups and things. i almost always plan a roast with all the veg when i know DH will be home for a weekend, and i eat with my brothers family one night a week, which is always meat and veg.
this will obviously change again when we have kidlets, as i will be inspired to cook for someone else! everything i cook now for someone else has to be freezable and easily reheatable so its cooked in bulk...
yep same here, we have them most nights. I'm lucky though DP does the cooking & he loves his veges he will do 4 at a min. & usually 8/9, I wasn't so keen at first but after 11 yrs together I have to say I am sad when he only does 4 .
The only exceptions are thinks like when we have spag bol but he will still add a couple of vegies such as zucchini, beans, brocoli etc... or taco's

Love vegetables - struggle with fruit for some dumb reason though.

We always ate a lot of vegies but when we turned vegie we discovered lots more ways to use them. If you want to increase the amount of vegies you eat then check out some vegie/vegan cooking books or recipe sites as they will give you some great info. Just beware the ones that put cheese or egg into everything! We have tried some really exotic foods now and love going to our local vege market to see what is different.

If it's not veges it's something with veges in it - I make my spaghetti sauce with capsicum, carrot, sometimes pumpkin, mushroom, zucchini... so normally whatever we eat has veges ir veges hidden in it!
Hate vegies with a passion....so mainly salads here...but i eat alot of fruit so thats my excuse for skipping them....and Chelsea eats alot of fruit and refuses vegies too!
We have veges every night, unless we have pizza or something like that. I even put finely chopped carrot in bolognese.
We usually have a minimum of three different veges on the plate every night. The Boy loves carrot, so that always seems to be there, plus any number of cabbage, green beans, potato, pumpkin, sweet potato, zucchini, corn, peas. Or what ever else I have...
I love veges, and I can't understand those that don't eat them either.
DH loves his spuds & carrots & onions. I love my broccoli, peas, sweet potato, brussell sprouts.
DS loves his veg, I think he has veggo tendancies. Last night I did roast lamb with spuds, onions, sprouts & corn. DS ate all his veg (and stole more sprouts!) and didn't eat his meat.
My bolognese has celery, onions, carrots, mushies as a standard
Every night here too - either alone as a side dish, in soup or grated in bolognaise sauce/fritters etc.
LOVE LOVE my vegies and hoping to pass that onto DD, so far so good!!!

Usually it's stirfries, laksas, curries, casseroles, pasta sauces, etc.
Also lots of vege soup like BG, toasties with tomato etc for lunch, veges on rivitas etc.

I'm trying to lose weight so yes it's veggies every night!!! I also have a rule that I must have fruit or veg with every meal or snack.
A third of what's on your dinner plate should be veggies...another third whatever starchy food (potato, corn, sweet potato, rice, couscous, bread or pasta) and only a third (or less) of protein.
If you're trying to lose weight then it should be half of your plate covered in veggies, and a quarter and quarter of carb and protein.
Our family has veggies every night except once a fortnight we have a take away treat,like chinese,well that includes veggies,but the kids like pizza or red rooster,and they snack on fruit at least two pieces per day,my kids never complain it`s what they have been brought up on.
kaz we eat them most nihgts as well, only exceptions is if it takeaway or spag bol etc...
sophie also LOVES fruit and veg, she's eat probably 4 fruit and 6 veg a day! i also struggle to get meat into her!! she doesnt really like brussel sprouts though and i dont blame her!!
she loves peas and mushrooms the most!
reason i asked this question is if we dont have vegies one night i feel soooo guilty!! was wondering how others felt about vegies!
