Recently been keeping mine in the fridge but only because we dont use them fast enough
sooo true CK lol. Either that or some days they might be at risk of being hard boiled.
Before I had my own chooks always in the fridge because you just don't know how old the eggs actually are.
Now that I have my own chooks I ONLY keep them on the bench in my kitchen.
Not sure who the OP was that said they go off quicker when NOT stored in the fridge, that may be true but I have eggs that have kept a little over a month on our bench and they are fine. The other thing (aside from the eggs absorbing fridge smells) just because they are in the fridge does not mean the "nutrients" of the eggs is kept in tact. They ALL start to loose their "nutrients" after they are laid regardless. Just because you CAN keep them a little longer in the fridge does not necessarily mean they will stay fresher longer. ITMS??
But there is a HUGE difference in Mass produced eggs from the supermarket and having your own chooks anyway (notthat everyone can have their own birds)

Own chooks here as well. I keep a selection on the bench, ready for any baking etc and the extra's in the fridge.
Oh and i like my eggs FERTILIZED my gosh im a loser but..........had too do it

Nae Nae that is kind of what got me thinking about it... I got some eggs from a friend who has chooks so them being fresh rather than bought from the shelf/fridge i was a little unsure how best to keep them. They're all used up now though and i kept them on the bench.
I would love to have chooks and have fresh eggs each day!!
Thanks ladies it almost seems to be 50/50 but one thing i did learn that i wasn't doing was cooking/using eggs at room temp. I only ever did it if a recipe specifically said.

I keep them in the fridge... but I always do a float test before I use them (if they float in water, throw them out, if they sink, they are good to use), and that's mainly cause I get them from my parents and can't always guarantee when they were collected...
I had a similar thought recently when some friends of ours gave us fresh eggs. It just felt odd putting freshly laid eggs in the fridge when its something I've ALWAYS done with store bought eggs. I ended up putting some in the fridge and leaving some on the bench- which were eaten up pretty quickly. Still got a couple of fridge ones left though.
But how long should freshly laid eggs keep for (both left on bench/pantry and kept fridge)?
And how can you tell when they're off besides the smell (i can't stand the smell of raw egg anyway so they all smell off to me)?

Yes thanks for that zilly, i will try remember to do that test. I haven't had eggs go off very often at all. In fact i can only think of one time when i cracked one and it was off and you could REALLY tell it was off![]()
