    Niliac- Thanks Sounds very yummy!

Sarah- Yep that is DH's exact point. We only live on canned fish in this household, but dad is coming over and he only eats fish or kangaroo meat. So was thinking fish but I am not sure if I will be able to convince DH. It may end up in a BBQ. beef for us, kangaroo for dad LOL. Thanks

ETA: olimoo- that sounds yummy too

well we are lucky and have a holiday place on the coast therefore we manage to catch quite a bit of fish, my favourite would be summer whiting I just dust with flour and fry lightly in olive oil spray

we also catch small flat head, soul, mackeral, and the occasional reef fish again same way for cooking

if for looking for a white fish - whiting is good for snacky style stuff, coral trout is yummy as a simiple grilled, battered or crumbed fish - very light but decent size fillets and doesn't dry out when cooked (can be quite expensive though). red emperor can be really nice as well - as you can see I'm more a reef fish person cause that's what FIL catches and we get spoilt with but can be very expensive to buy at market

My DH does a nice dish, fish with a pistaciho/malibu cream sauce, it's so nice. We usually use frozen Nile Perch, we always make sure they get it out of the freezer for as then we know it's only been defrosted once when we do it .

    hugs xoxo

Even just pan fried salmon fillet is lovely or white fish fillets (we use barra) put on a bed of dill, basil and parsley then top with a couple of bits of butter and the same herbs again and wrap in foil then bake for about 15 minutes (depending on size)
