Mince meat pies

400g minced meat
1 onion, diced
1 tbsp flour
pepper to taste
2 tsp parsley, chopped
1/2 cup stock
Salt only if needed
flaky pastry (buy pre made)

Place meat, onion, seasonings and parsley in saucepan and stir well. Add stock. Stir until boiling and simmer for 15 minutes. Cool. Set oveb at 220 degrees. Place pie dish upside down on a square of pastry and cut out a circle for the top. Line greased pie dish with pastry and trim of excess and fill with the cooled meat mixture. Moisten edges of pastry with water and and place the top on and press lightly all the way around to seal. Place slits in the top to allow steam to escape. Glaze with milk or a beaten eagg and place on an oven tray, bake at 220 degrees for 10 minutes, then at 190 degrees for 15 minutes.

You can also make miniature pies by cutting 6 rounds and putting them into a muffin tin and then a further 6 rounds for the tops. You can also leave off the pastry top and put mashed potato and cheese on top.
