Hi, I just stumbled across this thread. I just bought the mini Women's Weekly book 'Mince favourites' the other week. I have a million recipe books but couldn't resist as DS and DH love anything with mince in it.
I haven't tried these yet but will be once m/s subsides. I don't think I can handle the smell of frying mince just at the moment.:ms:
Beef, tomato and pea pies:
1 tbsp vegetable oil
1 sm brown onion, chopped finely
300g beef mince
400g can chopped toamtoes
1 tb tomato paste
2 tb worcestershire sauce
1/2 cup beef stock
1/2 cup frozen peas
3 sheets puff pastry
1 egg, lightly beaten
1. Heat oil and cook onion until soft. Add mince and cook. Stir in undrained tomatoes, paste, sauce and stock. Bring to a boil. Reduce heat and simmer uncovered about 20 minutes. Stir in peas and cool.
2. Preheat oven to 180deg. Oil 6 hole jumbo muffin pan
3. Cut 2 13cm rounds and 2 9cm rounds from each pastry sheet. Place the 6 large rounds in the muffin pans. Trim any excess. Lightly ***** the base with a fork. Refrigerate for 30 mins. Cover the small rounds with a damp cloth.
4. Blind bake the pastry in the mufin pan for 10 minutes. Remove and cool.
5. Spoon mince into the holes. Brush the edges with egg. Top pies with the small pastry rounds. Brush with the remaining egg. Bake uncovered for 15 minutes.
