Hi there, i just love a good quiche. Here's my recipe

    2 x 60g eggs
    1/2 cup cream
    1/2 cup full cream milk
    1/2 cup grated cheddar
    2 tbs fresh chives
    1 x med tomato sliced
    1 x diced onion
250g of chopped bacon (or ham if using leftovers - both taste good)
2 x sheets of frozen shortcrust pastry

preheat oven to 180 degrees C
Spray quiche dish with oil spray and line with pastry
Blind bake (according to pastry insructions)

Meanwhile cook bacon and onion until onion is transparent

    Layer onion/bacon mixture over pastry
Place tomato slices over the top
    sprinkle cheese over the tomato
    add salt and pepper
Mix eggs, cream, milk and chives together and pour over the top

Bake for 45mins or until golden brown and firm to touch.

Goes great with a simple salad or chips
