Omelette - with diced ham, grated tasty cheese, chopped sundried tomatoes, chopped chives & some cracked pepper .... Yummo !! .... Too easy
Might make some " Little Lemon Tarts " for later ... If anyone wants the recipe here it is ;
* Pkt of 12 pre-made pastry shells/cases (in cake section at Coles)
* 1/3 cup caster sugar
* 1/3 cup lemon juice (bottle lemon juice is fine)
* 1/4 thickened cream (I use cheap Coles brand)
* 3 eggs
* 1 lemon (is fine without, if you don't have a lemon)
- Preheat oven, moderate temp (I do 180c)
- Whisk together caster sugar, lemon juice, cream & finely grated lemon rind of 1 lemon
- Add 3 eggs, one at a time, ... Whisk all together !!
- Pour into pastry shells (can use a 1 x medium size pasrty shell, no too big)
- Bake 15-20mins until set (where it doesn't wobble much)
... Taste better chilled for at least an hour in the fridge after being baked !!!!!!!!!

Nice one smiles4u - I have a whole bowl of lemons that I need to use, and my lemon tarts take too long to make - it uses a tradional custard and needs stirring for an hour or so.
For dinner tonight: beef bourguignon, rice and green vegies.
Tomorrow night - little lemon tarts for dessert...
I'm making the beef & mushroom ragout slow cooker mix from Mc Cormicks
Have added my own twist on it though (can't help adding extra stuff! ) - Have just added extra veggies, a bit of gravy stock, tomato paste, fresh garlic and extra herbs & spices

Hhhhmmm Holly have been meaning to try that McCormicks mix, just have to remember to buy it!
I parboil the potatos in the microwave, so 5 minutes for 4 potatoes in water & then drain the water, stir it around to make them a bit course. I mix 1/2 lemon juiced, 1-2 tbsp olive oil, rosemary and 1 tbsp minced garlic or 2 garlic cloves crushed. I mix that together & then stir through the potatoes & chuck them in the oven on 180 or so for 20 minutes & you get crunchy yummy potatoes!!!
