    What's your 'slack dinner night' Recipe?

    We always have a slack dinner night - either Saturday or Friday night. Usually Friday night as we go out Saturday's (usually).

    I want to know what's your slack dinner recipe?

    Ours includes things like:

    -Tuna Mornay (tonight)
    -Gourmet Bacon & Egg Sandwiches - with stuff like avocado, cheese, pickles, etc...
    -Mexican Salsa Dip (Refried beans, salsa, sour cream, avocado & cheese baked in the oven & then you use corn chips to dip)
    -Hot Dogs
    -Macaroni cheese (usually add things like ham, mushrooms, brocolli - whatever we have spare)
    -Marinated chicken wings with a simple salad
    -Baked Beans on toast (when in Aus as the Baked Beans here in China are awful!)
    -Homemade pizzas

    I just want to know what yours are???

    We like breakfast for dinner on lazy nights. Eggs and something (sujuk, tomatoes, mushrooms, baked beans, smoked salmon) on toast.
    Roast chicken with salad.

    I usually have a stash of frozen left-overs so that on lazy nights I can just re-heat and serve. Casseroles, curries.... all the wet foods reheat well.

    Shooting star told me a receipe many years ago that my girls love...

    bolognaise Val u vunts

    make a mince bolognaise pour into val u vunt casing of choice, sprinkle with cheese and heat in oven til cheese melted... my girls love it!!

    Wow, Jayne, some of your lazy night dinners are my normal night dinners, lol!

    Ours are usually things like,

    French toast
    Egg on toast
    Baked beans/spaghetti on toast
    Tinned soup and crusty bread rolls
    Frozen pizza (with added toppings) and salad
    Frozen fish, oven chips and salad
    Toasties with ham cheese and tomato
    Salad with shop brought chicken

    Oh, i like that idea!
    Lazy nights are toasted ham,cheese,tomato and onion sanga's or toasted steak sanga's with the thin sizzle steak you can buy at woolies. It takes me longer to cut up and cook the onions, grate carrot etc then it does to cook the sizzle steak.

    Tuna pasta - Can of tuna, tomato paste, mushrooms, onion, light cream & cheese served over spiral pasta. The kids love this.
    Pancakes!
    Jaffles/toasted sandwiches.
    Chicken Caesar salad made with BBQ chicken.
    BBQ Chicken & Salad
    Chicken & corn soup (can you tell BBQ chickens are my staple for easy meals? lol)
    McLisa's bacon & egg Muffins.
    Hamburgers - either chicken or beef.

    Yep, some of those are my all out, cooking type dinners. My lazy dinners involve 1 or less pans and very little effort at all!

    Crumbed fish, chips and veges (maybe a fried egg or garlic bread instead of chips).
    Pasta with sauce from a jar (with frozen peas and a handful of baby spinach).
    Baked beans or spaghetti on toast.

    Most nights I prep dinner in the middle of the day and one of my new faves is steamed fish (salmon or white fish) with quinoa/rice. 3/4 cook your quinoa/rice, drain and put in a steamer (on a plate or layer of baking paper) then sit the fish on top. Add chopped tomato, some sliced olives, diced onion, snow peas, herbs and juice of 1/2 lemon (or whatever you've got lying around). Sit in the fridge until dinner time then steam on the stove for about 10 mins after the water boils. Voila, dinner in 1 dish - no stirring, turning etc ;-) You can do it with chicken too.

    I like a tin of tomato soup with a handful of frozen veggies, tin of baked beans and some diced meat thrown in, it can all go on together (love 1 pot meals!) takes 15 mins to cook and still has veggie in it! Even better if you have leftover cooked meat already in the fridge

    An omelette
    I quite often make up a big batch of pizza dough, divide it and freeze it.
    Then on those nights I can't be bothered, defrost one and have yummy gourmet toppings on it.

    Lazy nights
    Charcoal chook with a side or just sandwich
    Party pies (DS1 so obsessed at present would eat pies for breaky if he was allowed)
    Take away chinesse
    Leftovers in freezer
    Soup
    Omlette (kids dont eat)
    Scrambled eggs (kids dont eat) but yours might
    Slow cooker is a lazy night meal to me as 30 mins prep in morning is all it takes!!

    Pesto and ricotta sauce on pasta is our go to dish, ready in 5 minutes. Just mix pesto, ricotta, salt and pepper for the most delicious pasta sauce and you're done.

    Thanks so much ladies!!! I'm thinking I am going to google some ommelette dishes now. I'm 'trying' very hard to be quite savvy in the kitchen. I really enjoy cooking & trying out new things. Some of you mentioned tomato soup in a can - oh how I miss this!!! We can't seem to get it here. I love tomato soup in a can. Others have said shop bought barbecue chickens. Oh my mouth is literally watering. I could get a barbecue chicken here - they do sell them. But they come complete with feet & head & i just CAN'T take care of this myself. Big wuss I know but I just can't do it.

    My girls favourite dish here is duck. Either duck with orange sauce, or crispy skin duck or noodles with duck. Duck is more readily available than chicken here & I'm not a fan of the meat itself & we used to have pet ducks as children & I just can't fathom eating duck. Also, majority of the time it comes complete with the head & it just sends me over the edge. Literally puts me off my food. Sorry. Oh I should add that duck is a definitely a dish we only order in a restaurant. I wouldn't be able to cook it at home. I would be in tears I think! lol

    I'm also thinking maybe a quiche.......... I'm getting some great ideas! Thanks so much.

    I make a really delicious zucchini slice which is basically a quiche anyhoo.

    EWWWWWWWWWWWWWWWWWWW at chicken with head and feet that feral!!!!!!!!!!!!!!!

    I do love duck i must say especially Peaking duck and roast duck!

    The other night I made a carrot slice that is carrot, zucchini, ham, eggs, cheese plus a few other things. Eat on it's own or have with chips/salad/veggies! I make it all the time

    Oh... quiche is another one of my slack night meals 'cause I use frozen, pre made bases. Pumpkin & fetta quiche is a favourite.
