    Banana Cake/ Muffin Recipes

    Have some bananas that are ready to be used for a cake or for muffins

    I cant find my recipe that i always use Can you please share yours with me, I had banana cake last week at a friends adn it was so yummy but she hasnt emailed it to me yet!

    Sum, this is my banana cake recipe, and it's so yum and moist. If i have heaps of bananas, i just make a double batch and put half in a loaf tin and the other half into a muffin tray, and freeze the muffins for DH's lunches....

    Banana Cake

    Ingreadients:

    4oz butter
    1/2 cup sugar
    2 eggs
    2-3 banana's - mashed
    1/4 tsp vanilla
    1 1/4 cups SR Flour
    2tbs milk mixed with 1/2 tsp carb soda

    Method:

    Pre-heat oven to 180 degrees. Spray a loaf tin with cooking spray and line bottom with baking paper.

    Cream butter and sugar. Add eggs and mix well. Stir through banana and vanilla. Fold in flour and milk alternantely until all incorperated and well combined.

    Pour into laof tin and bake for 35mins, or until a skewer insterted in the middle comes out clean.

    Allow to cool on wire rack and enjoy!!

    I don't put an icing on mine, but put a little spread of butter or marj on before eating. It's also nice with a cupper whilst still warm.

    I used your recipe, although I did use Brown sugar as I had run out of white and wasnt going on a long trip just for that. Mine didnt take as long to cook and were very yummy. Had to hide some from DH so we have some for lunch during the week.

    Caramel Banana Cake
    2 ripe bananas
    2 eggs
    1/4 cup milk
    1 cup firmly packed brown sugar
    1 1/2 cups SR flour
    125g soft chopped butter

    Grease baba tin, preheat oven to 180.
    Combine all ingredients in a bowl and mix with electric beaters until smooth and changed in colour. Bake for aprox. 40 minutes.
