    We always have frozen berries as a stand by dessert in summer but found a new use for them recently. Cubed bread, tossed in brown sugar, mix with frozen berries and custard. Zap in microwave but use a larger bowl as it made a mess!!

    I just found this recipe on pinterest...

    Nutella Mug Cake

    Ingredients

    4 tablespoons self rising flour
    4 tablespoons white granulated sugar
    1 egg
    3 tablespoons cocoa powder
    3 tablespoons Nutella
    3 tablespoons milk
    3 tablespoons olive or vegetable oil

    Method

    1. Combine all ingredients in a large coffee mug. Whisk well with a fork until smooth. Microwave on high for 1 1/2 – 3 minutes. (Time depends on microwave wattage. Mine took 1 /2 minutes.) Top with whipped cream and a little chocolate sauce if desired.

    2. Top with whipped cream and chocolate syrup. Enjoy!

    Note: Depending on the wattage of your microwave, you may have to increase cooking time.

    Makes 1 very large serving.

    I have a cup brownie that comes out almost like a cross between a lava cake and self saucing pudding. And one is all you need. I adapted it from another recipe I used to make.

    I bribed the girls with these tonight if they ate all their dinner.

    Dark Chocolate and Marshemellow Paninis

    Use raisin toast or fruity muffins (the ones you split in two, not the muffin top cake ones)

    Chop up some dark chocolate (or use Lindt 60% dark chocolate squares)
    Put those and a couple of marshmallows on one slice of the raisin toast or half the muffin
    Put another slice of raisin toast or the other side of the muffin on top (like a sandwich)
    Butter both sides
    Pan fry both sides until chocolate melts (about a minute or so each side)
    Sprinkle with icing sugar or sprinkle over hot chocolate mix
    Eat.

    Rouge's Chocolate Molten Lava Cake (in a mug)

    1/4 cup of plain flour
    1/4 cup of brown Sugar
    2 Tbsp of Cocoa powder
    1 Egg
    3 Tablespoons of Milk
    3 Tablespoons of Tub butter
    8 squares of dark chocolate (roughly chopped into chunks) - DO NOT USE CHIPS! It helps the molten process.

    Ok so mix the butter and sugar together then add the egg and mix, then add the milk and flour/cocoa. Once you are happy with the consistency stir though the choc chunks. Microwave in a mug (do not use a ramekin as it changes the cake completely) for 1min 20. Place a flat bowl over the top of the mug and turn out. You will be left with what looks like an erupted volcano with thick fudgey chocolate sauce and a beautiful light cake underneath.

    I played with many recipes to perfect this. You need the brown sugar for the syrupy sauce, you need butter to ensure that it has that real flavour (I prefer not to melt it as it has a lighter sponge this way) and you must use chunks of chocolate instead of chips! I tend to drizzle it with cream. And DH and I can easily share one between us.

    It should look like this...
