Melting Moments

125g Butter
1/4 C Icing sugar
1 tsp vanilla essence
1/2 C SR flour
1/2 C cornflour

Filling
30g butter
2 Tblsp Icing sugar
2 tsp cocoa
(or use a bit more icing sugar and add lemon or orange juice & zest instead of cocoa)

1. Cream butter & icing sugar then blend in vanilla
2. Sift flours together & fold into creamed mixture
3. Pipe or spoon mixture onto greased or papered baking tray
4. Bake in slow oven (about 150 degrees) for 10-15 mins or until lightly golden
5. Allow to cool on tray for a few minutes before transferring to wire rack to cool completely
6. Prepare filling: cream butter, icing sugar & cocoa (or zest & juice) together until smooth
7. When cold, join 2 biscuits together with a dollop of filling

These are really yummy and easy, as long as you handle the biccies with care - they can be very crumbly.
