    How do you make nachos?

    Well we went to a mexican restaurant a little while back and DD1 ordered nachos off the kids menu. Out came plain corn chips with melted cheese. That was it.

    So it got me to wondering - how do you do nachos? Veggo nachos? Also ...and I nearly can't bear to ask...is there a low-fat/healthy version??

    I make them simple and easy.

    Layer of corn chips then spoon some chunky salsa on and sprinkle grated cheese put on oven or microwave.

    Then some sour cream for serving (if I remember to buy some)

    Dont think You could really do lot fat version unless you use low fat cheese.

    I make a warm tomato chilli sauce or a salsa, then in a baking dish layer the corn chips with refried beans, cheese (half mozzarella, half tasty), pop those in the oven to toast and melt the cheese, then serve with the sauce or salsa, sour cream and guacamole. The chips don't go all soggy that way.

    Man, I haven't made nachos in years. Thinking I might have to do them tonight!

    Layer of corn chips, layer of cheese, layer of corn chips, layer of mince mix (details below), layer of cheese. Cook in the oven until cheese is melted (~5mins) and then top with salsa (details below). Serve with avocado dip (details below) and sour cream.

    Mince mix
    1x Onion
    500g Mince
    1x Taco Seasoning Packet
    1tbsp Mexican Chili Powder
    2tbsp Tomato Paste
    aprox 4/5cup Water

    Cook off onion and then mince. Add the rest of the ingredients; simmer uncovered until it combines and thickens (5-10mins).

    Salsa Dip
    1x Onion (diced)
    1x Red Chili (diced)
    1x Green Capsicum (diced)
    1tbsp Tomato Paste
    500g Tomatoes (diced)

    Cook off the onion. Add chili and capsicum, cooking until tender. Add rest of the ingredients and bring to the boil. Simmer uncovered until it thickens (about 10-15mins). Leave to cool in the fridge.

    Avocado Dip
    1x Avocado (mashed)
    Handful Diced Onion (I just leave a bit from the onion used above)
    4-5 Lemon Squeezes
    1tsp Honey
    1tbsp Sour Cream
    Salt and Pepper to taste

    Simply combine all the ingredients above.

    If pressed for time salsa and guacamole can be purchased instead of made but it is worth the effort

    We often have nachos for tea, we go all out making up a spag sauce with mince meat.

    Put plain corn chips in a bowl, mince sauce on top (beans if you like...not for me) sprinkle with cheese...melt in the oven & then add mashed avacado & sour cream on top........yummmmmy!

    In a flat/shallow bowl put layer of
    - corn chips
    - 4 bean mix (tin)
    - salsa
    - grated cheese

    nuke in microwave till cheese melts and add avo and sour cream on top


    Soooo easy and one of DH's faves

    That's how I make them too. I also put some spring onion and avocado on top.

    LOL, we haven't had them for aaaaages, like years, but DH asked earlier to have them tonight!!!!

    DH can be a bit fussy, so our nachos are pretty plain. And I'm pretty fussy about them not going soggy etc. So I do two layers of corn chips (PLAIN) and grated cheese on a plate, bake in the oven til cheese has melted, and serve with a bowl of salsa for dipping, and a bowl of sour cream. I like to have guacamole too, so do that sometimes. I would LOVE to have beans on them, but DH hates beans. We love to sit and share all the stuff between us, I'm looking forward to it tonight now!

    I always do a Chilli Con Carne with my nachos. Once the meat is cooked I place it on layer of corn chips (usually Dorito's) and sprinkle with cheese, then put in the over til the cheese melts. Then serve with mashed avocado (with some lemon juice) and sour cream...guess we'll be having nachos again this week...yum!

    LOL Lulu, now I think about it, the worst nachos I've ever had were from a Mexican restaurant - supposedly one of the better Mexican restaurants in Melbourne and supposedly their speciality. They were soggy to the point of being inedible.

    we use a mince sauce similar to spag bog but with chilli and beans

    we bake plain doritos with cheese(on 2 trays)
    we then layer
    baked chips, meat sauce, sour cream, more baked chips, meat sauce, guacomole and sour cream... sometimes DH puts some jalepenos on for him self

    Ours is similar tot his though without the tomato paste.
    DH often makes salsa with hot chilis in it.
    My guacamole is avocado, red capsicum, lemon salt hmm i htink there is some tomoat in there..i should look up the recipe - its not mine, its from the candle cafe cookbook.

    Australia cannot do mexican so I have been told by many American/Canadians!

    BUT with just cheese and jalapenos is not *that* unauthentic (but they wouldn't serve jalapenos on a kids menu) - it's actually more authentic than most of the sloppy crap you get here. The only difference would be the fact they wouldn't be mass produced corn chips, and the cheese would be mexican white cheese... and it would be served with pickled jalapenos.

    CHRISTY?! am I right... have I learnt well?

    Corn chips.. BBQ Sauce.. cheese.. stick it in the microwave.. yummmmmooo!! Really! Give it a try.. tastes so good!!!!

    We do also do the salsa way too.. corn chips, salsa, cheese, lettuce and sour cream.. but the BBQ sauce way is a quick easy snack.

    chicken

    Instead of mince, I chop up some BBQ chicken and add it (got the idea from my 4 ingredients cook book). it tasty and effortless.
