You could do Curried sausages, or sausages with onion gravy/bacon gravy/tomato and onion gravy? Or you could squeeze all the meat out, mince it together again, make patties and roll in crumbs for crumbed rissoles?
i always do a vegetable curry with my sausages cheap and makes 8 sausages go far.
