    Quick Desserts

    What do you lovely ladies do for a quick and easy dessert? Preferably using things you would keep in the pantry or fridge.

    I bake for dessert ... nothing fancy and all in all takes only 15 minutes to prep. Sure you can try and keep it in the fridge, but in my house, it does not even get to cool down Yes we are little piggies

    Sieve 1.5 cup of flour, 1/2 cup sugar and pince of salt in bowl. Throw in 2 eggs, 2 tbsp apricot jam, 2 tbsp butter, 5ml bicarbonate of soda disolved in 1/2 cup of milk. Mix well. It does not make lot of dough, but don't be fooled. Place in deep ovendish and bake at 180 deg for about 25 minutes till golden on top. Test with cake tester.
    While baking, boil together 1 cup butter, 1 cup water, 3/4 cup sugar, 5ml vanilla essence and 1 cup evaporated milk (or if you are really feeling up to it ... double cream)
    As soon as the dessert comes out the oven, pour syrup over and let it soak in.

    TA-DA!!! Serve with chunky custartd or left-over evaporated milk. Going to make some again this weekend.

    I'm usually the only one that eats my desserts here...can be good though- means I don't have to share! Lol. Something super quick is tinned peaches (or other tinned fruit) and icecream or custard. If you have a tin of apples, or even apples you can chop up an apple pie or apple crumble is fairly simple and fast to make. Jelly & custard is also good, although you kind of have to plan ahead for the jelly!

    A home-made muffin heated in the microwave with some custard is also nice, or my mum used to make baked apples- take the core out of an apple and stuff with mixed fruit/sultanas, sprinkle with a bit of brown sugar and cook in the microwave until the apple is tender. Serve with custard. It's a nice wintery dessert which is simple. Another one is golden syrup dumplings..ok not so quick but they are so yummy!

    Well the quickiest and easiest for us is simply fruit and yoghurt (very healthy!). Otherwise icecream with some fruit or chocolate topping if it's in the house. Apple crumble is pretty quick and easy too and goes very nicely with icecream or custard.

    ETA: Snap ss_storm! Also a quick trip to the Cheesecake Shop is a quick and easy dessert

    Chocolate Marie Biscuits

    2 packets of Marie Biscuits or Tennis Biscuits
    500g Icing Sugar
    2 Eggs
    250g butter
    +/- 3 Tbsp Cocoa powder

    Crush Marie Biscuits but not to crumbs.
    Sift cocoa and icing sugar.
    Melt butter, add eggs and melted butter to icing sugar and cocoa.
    Mix until smooth paste is formed.
    Add biscuits, stir until biscuits are coated.
    Press into dish about 1.5 to 2cm thick and place in fridge to set.
    Cut into squares just before they are set.

    Be careful ... to much of this is going to make you sick, but you are not going to be able to keep yourself from having "just one more" And don't hate me for it

    Ingredients (serves 8)
    250g pitted dates, chopped
    1 teaspoon bicarbonate of soda
    1 1/2 cups boiling water
    125g butter, softened
    1 cup brown sugar
    1 teaspoon vanilla extract
    2 eggs
    1 3/4 cups White Wings Self-Raising Flour, sifted
    Caramel sauce
    1 cup brown sugar
    300ml thickened cream
    1/2 teaspoon vanilla extract
    60g butter
    Method
    Preheat oven to 180?C. Grease and line the base of a 7cm deep, 22cm (base) cake pan.
    Place dates and bicarbonate of soda into a bowl. Pour over boiling water. Allow to stand for 20 minutes.
    Using an electric mixer, beat butter, sugar and vanilla until pale and creamy. Add eggs, 1 at a time, beating well after each addition. Using a large metal spoon, fold through date mixture and flour until well combined.
    Spoon mixture into prepared cake pan. Bake for 35 to 40 minutes or until a skewer inserted into the centre comes out clean. Turn onto a plate.
    Make sauce Combine all ingredients in a saucepan over medium heat. Cook, stirring often, until sauce comes to the boil. Reduce heat to medium-low. Simmer for 2 minutes.
    Pierce pudding all over with a skewer. Pour 1/2 cup of warm sauce over warm pudding. Stand for 10 minutes. Cut into wedges. Serve with remaining sauce.

    Oh my .. you know what I just thought of ... those marshmallow sweets with the popped rice (cereal) ... they are just yummo for anytime. And they keep very well in the pantry or fridge. Will try and find a recipe for you

    Chocolate mousse - the dairy or non-dairy way.

    Dairy way
    Melt one family block chocolate with 600mL cream. Wizz mix until quite bubbly. Add 1 tsp gelatin in water. Pour over chopped strawberries/raspberries/blueberries/passionfruit/stewed pear/whatever is lying around, in 6 glasses. Can also add a digestive biscuit at the base fro crunch. Chill til set.

    Non dairy way
    Melt one small block non-dairy chocolate (Whittaker's Dark or Green & Blacks or Sweet William) with one block silken tofu and 1/2 cup sugar. Wizz mix until very smooth. Add 2tsp cornflour slurry. Pour over fruit and/or biscuits. Chill til set.

    ME!! for the dumplings ... I just love them, I make cinnamon dumplings in the microwave. Havent for a while, though, should though

    nadine I love golden syrup dumplings and I have tried them heaps but these are just to die for, when you make them let me know what you think.

    Golden Syrup Dumplings

    Prep Time ? 10 minutes
    Cooking time ? 9 minutes

    Ingredients:

    1 cup self raising flour
    4 tablespoons of butter
    1 cup brown sugar
    1 egg beaten
    ? teaspoon vanilla essence
    2 tablespoons of milk
    2 tablespoons of golden syrup

    1. Place flour in a mixing bowl, using fingertips, rub in half the butter until it resembles fine breadcrumbs. Using a fork stir in ? cup of sugar, the egg vanilla and milk to make a soft dough. Using damp hands shape dough into 8 balls and set aside.

    2. Place remaining butter, remaining sugar and golden syrup in a large shallow microwave safe dish. Add 1 ? cups boiling water and mix well until sugar dissolves.

    3. Cook on high (100%) for 4 minutes or until simmering. Add dumplings and cover. Cook on high for 5 minutes, stand covered for 5 minutes (if you can wait that long) serve warm with ice cream or cream.

    Notes:
    You can cook dumplings in advance and reheat on medium for 3-5 minutes
    Avoid overcooking. If using a higher wattage microwave reduce cooking time by 1 ?2 minutes. This recipe is based in a 1250 watt microwave. Mine is 1200 watt and it turns out fine.

    Ok so I learned a few things last night

    My microwave is only 900W
    I LOVE this dumpling batter
    AND I can't read a recipe!!!!

    I liked it all right, but I think the dough was a bit runny (but yummy, runny, but yummy), or I did something wrong, because I could not mould the dumplings by hand. I just dropped them in the syrup with a spoon. In the end the dumplings were more like little overdone cakes in yummy-syrup than dumpling-dumplings. Not that I'm at all complaining, because I got out about 9 dumplings and ate 4 semi-hot I did however liked it A LOT more this morning at 5:05 when DS woke me up ... so in actual fact I had 5 dumplings!!

    Thanks Salad. I'm going to tweak it a bit by using my cinnamon dumpling dough and your syrup. Going to try again tonight!!

    mmmm I love dumplings, I've done them in the microwave once & think I over cooked them.

    I stumbled across such a quick easy & yummy sponge pudding recipe on the net when Mum & Dad were visiting recently....so quick & a real winner. I would have to look it up again for the recipe, but basically just a quick sponge batter, put that in a square cake pan.....doesn't look like much but once you roll it up. Cook in oven for like 10mins, then heat jam in a saucepan til runny, take sponge out of pan still warm, cover with jam, roll up & dust with icing sugar...serve with whatever you like. Yum & it takes no time at all.
