The first day of your period is Day 1 of your menstrual cycle. The last day of your cycle is the day before your next bleed. 28-31 days is the average cycle length, and indicates hormonal stability. Cycle lengths shorter or longer than this can inhibit conception attempts, so that's great that you are already in the 'ideal' zone.
Seeing as you are in Sydney, I would suggest you check out the Australian Council of Natural Family Planning website and find out where your nearest NFP centre is (there are plenty in NSW). If you make an appointment, they will go through in great detail with you how to chart your cycles, and identify ovulation based upon fertile signs and help with timing methods in regards to gender swaying - although, as with any gender swaying it is never 100%, just increases the odds.
Then I would check out the A-Gender website (as recommended to me by Tanya) and order one of their girl conception packs with the optional add on dates. That will provide you with all the latest up to date info on gender swaying techniques for a girl - including diet and supplements for you and DH, lunar influences, timing, ph levels etc.
