I made these for my daughter's 1st birthday party last year ... And were a hit with kids & adults alike I have since made them several times.

*** HOMEMADE SAUSAGE ROLLS ***



Makes 72 ?? (I can't remember how many BUT I know it's lots !!)

Preparation Time 30mins

Cooking Time 25mins


**INGREDIENTS**


500g sausage meat
500g beef mince
1 carrot, coarsely grated
1 zucchini, coarsely grated
3/4 cup dry breadcrumbs
1 onion, finely chopped
2 eggs
2 Tbs tomato paste
2 Tbs barbecue sauce
6 sheets frozen puff pastry, thawed


**METHOD**


1. Preheat oven to hot, 200c. Lightly grease & line 3 baking trays with baking paper.

2. In a large bowl, combine sausage & beef mince, carrot, zucchini, breadcrumbs, onion, 1 egg, paste & sauce.

3. Cut each sheet of pastry in half. Pipe meat along one long edge of each. Roll up tightly to seal.

4. In a small bowl, whisk remaining egg. Use to brush rolls. Slice each roll into 6 pieces. Arrange on trays, about 3cm apart.

5. Bake for 20-25mins until golden brown.

(Can be frozen too !!)
