This is the recipe that my mum gave me, I love it

400g grated zucchini
1 chopped onion
3 rashes bacon (or ham if you like)
1 cup grated cheese
1 cup SR flour
1/2 cup oil (you can get away with 1/4cup)
5 eggs beaten

Mix together and pour into a greased tray. Bake for 30-40 min in a moderate oven.
