We do a roast about once a week in winter, less often in Summer. Usually lamb or pork, but I like kangaroo too (just buy it in Woolies, cheap as!). Occasionally roast a chicken and we're having Christmas in July next weekend, so we'll do a turkey.
DH usually cooks the lamb or pork, I'll do the kangaroo or chicken and the veges too. I love experimenting with stuffing int a chicken or turkey (breadcrumbs plus lots of fresh herbs, walnuts or pinenuts, sultanas, onions or shallots, dried apricots, garlic etc - delicious!).
Such an easy dinner! Just remember to always make enough for leftovers!![]()

If we have chicken I just go to RedLea and buy a ready to cook one that is pre seasoned and ready to cook. I also cook it in an oven bag to eliminate the splatter while its cooking. Oh and a large chook takes about 1.5 to 2 hours to cook.
