Ooh, I love roast dinners!! I do one a week usually, I can't stand meat on the bone so I usually get those honey & macadamia rolled roast (chicken) from Lenard's or the equivalent (we don't have a Lenard's here anymore but the 'butcher' - they really only do chicken - always has them so I pick one up when doing the groceries), or if pork is on special at Woolies I'll grab a lump of it so we can have crackling
I do crunchy roast potatoes with garlic, roast pumpkin, a bit of sweet potato for myself (DH won't eat them) and then steamed carrots, corn, peas and broccoli, and I make gravy the 'proper' way (using pan juices for extra flavour)... and my goodness we're full afterwards, we never have room for dessert!
My roast dinners are DH's favourite so I do one at least a week to make up for cooking 'all that other crap' (stir-fries etc, he's a meat-and-taters kind of bloke but I like spicy exotic food that's simple to prepare and fast to cook)
