Creamy Chicken Broccoli Ravioli

Ravioli comes from northern Italy and has been around since the 1300s! They were thought of as a special treat back for the wealthy, but today they’re a popular dish with endless flavour options.

This BellyBelly recipe keeps our favourite classic flavours but adds a healthy twist. We use lean chicken for protein and broccoli for extra vitamins and fibre. Paired with a creamy Parmesan sauce, it’s a satisfying and balanced meal perfect for a family dinner or a special occasion.

Creamy Chicken Broccoli Ravioli Tips

  • Fresh Ingredients: Use fresh, high-quality eggs and all-purpose flour for the pasta dough. It creates a springy texture and richer flavour.
  • Don’t Overfill: A teaspoon of filling per Ravioli is a good rule of thumb. Too much will cause them to burst while cooking.
  • Seal Well: Brush the edges of the Ravioli with water before pressing them together to form a tight seal. You can also use a fork to crimp the edges for a decorative touch.
  • Cooking Time: Keep a close eye on the Ravioli while boiling. They’re done when they float to the surface, typically within 3-4 minutes any longer they become rubbery.
  • Sauce Thickness: Adjust the consistency of your favourite sauce (creamy tomato, pesto, or browned butter with sage are all great options!) by adding more or less cream until it coats the Ravioli nicely.
  • Garnish: Sprinkle with chopped fresh herbs, grated Parmesan cheese, or a drizzle of olive oil for a restaurant-worthy finish.

Ingredients

For the pasta dough

2 cups all-purpose flour
2 large eggs
Pinch of salt

For the filling

1 cup (about 150g) cooked, shredded chicken (breast or thigh)
1 cup broccoli florets, steamed and finely chopped
1/2 cup ricotta cheese
1/4 cup grated mozzarella cheese (or Parmesan)
Salt and pepper to taste

For the creamy Parmesan sauce

1 cup heavy cream
1/2 cup grated Parmesan cheese
2 tablespoons unsalted butter
2 cloves garlic, minced
Salt and pepper to taste
Fresh parsley, chopped (for garnish)

Direction

Make the pasta dough 

  1. Mound the flour on a clean work surface and make a well in the centre. 
  2. Crack the eggs into the well and add a pinch of salt. 
  3. Using a fork, gradually mix the eggs into the flour until dough forms. 
  4. Knead for about 5-7 minutes until smooth. 
  5. Wrap the dough and let it rest for 30 minutes.

Prepare the filling 

  1. Combine cooked, shredded chicken (about 150g), chopped broccoli, drained ricotta cheese, mozzarella cheese, salt, and pepper in a mixing bowl. 
  2. Mix together well.

Roll out the pasta 

  1. Divide the dough into even portions. 
  2. Roll each portion into thin sheets, about 1/16 inch thick, using a rolling pin on a lightly floured surface or a pasta machine for even thickness.

Assemble the Ravioli

  1. Place 1 tablespoon of filling in the centre of each pasta dough square.
  2. Top with another sheet of pasta dough.
  3. Press around the filling to remove air pockets, and seal the edges with a fork or a ravioli cutter.
  4. Repeat with the remaining dough and filling.

Cook the Ravioli

  1. Bring a large pot of salted water to a boil.
  2. Gently add the Ravioli and cook for 3-4 minutes or until they float to the surface.
  3. Remove with a slotted spoon and set aside.

Make the sauce 

  1. In a saucepan, melt butter over medium heat. 
  2. Sauté minced garlic for 1-2 minutes until fragrant. 
  3. Pour in heavy cream and simmer. 
  4. Stir in Parmesan cheese until melted, and the sauce is smooth.
  5. Season with salt and pepper.

Serve

  1. Place cooked Ravioli on plates.
  2. Spoon the creamy Parmesan sauce over the Ravioli.
  3. Garnish with chopped fresh parsley and additional grated Parmesan cheese, if desired
  4. Serve hot and enjoy your delicious homemade Creamy Chicken and Broccoli Stuffed Ravioli!
