The sausage roll, with its origins in the 18th century, has evolved into a versatile snack. It started as a minced meat pie, a popular street food in England, and evolved into wrapping the meat in pastry to create a more portable and convenient food for workers.

- Choose the proper pastry: For a flaky, buttery crust, opt for puff pastry. Shortcrust pastry is a good alternative if you prefer a lighter, crispier texture.
- Prepare the filling ahead: Making the filling in advance allows the flavours to meld and develop.
- Roll out the pastry evenly: Ensure the pastry is rolled out to a uniform thickness for even cooking. If using store bought pastry – then make sure that you have the same number of sheets per roll.
- Brush with egg wash: A beaten egg wash gives the sausage rolls a glossy finish and helps them crisp up.
- Bake at the correct temperature: Baking the sausage rolls at a high temperature ensures a golden, crispy crust.

Sausage Roll Recipe – Tips
- You can have ‘thinner’ and thicker-looking pastry. The thinner pastry can be made from using wraps. Simply roll the sausage meat in the wraps and seal. Very crispy and crunchy, and in fact much less fat.
- Change the filling to Spanish chorizo sausage for a lovely spicy alternative.
- Mix a little chopped apple or apricot in with the sausage meat for another flavour
- Before cooking, sprinkle with poppy seeds to give extra crunch and a lovely finish

- Mix some mango chutney in with the sausage meat ” absolutely delicious and such a surprise when you bite into them!

Ingredients
- 2lbs/1kg of good quality sausage meat
- 1lb/500g pack of readymade puff pastry
- 1 small onion, finely chopped
- 2 tsp of dried mixed herbs
- 1 large egg, beaten
Directions
- Preheat the oven to 200C/400F/Gas mark 6 or 200 C/392F Air Fryer.
- In a large bowl, mix the sausage meat, onions and herbs together. Flour your work surface with a dusting of flour.
- Roll out the pastry into a large rectangular shape, quite thinly, and then cut in half to form 2 long rectangles.
- Place half of the sausage meat mixture along the middle of each rectangle like a long tube. Brush one side of the pastry with the egg wash. Fold the other side of the pastry over the sausage meat and press down firmly to seal. Trim off any excess pastry. Cut each rectangle into even-sized pieces (about 8-10).
- Place on a baking tray and cook for 15-20 mins until the pastry is crisp and golden and the sausage meat cooked through.
- Leave to cool before removing from the tray. If you have any leftover sausage meat, make into meatballs for future use.

Vegetarian Sausage Roll Recipe Tips
- You can have ‘thinner’ and thicker-looking pastry. The thinner pastry can be made from using wraps. Simply roll the sausage
- Before cooking, sprinkle with sesame seeds to give extra crunch and a lovely finish
- Never add warm filling onto the cold puff pastry, it will melt the pastry, make sure that the filling is cool as to not make the pastry soggy!

Ingredients
- 400g button mushrooms
- 200g brown lentils rinsed and drained
- 50g chestnuts finely chopped
- 2 small leeks finely chopped or 2 medium brown onion finely diced
- 2 small carrots grated
- 4 cloves garlic crushed
- 1 cup white breadcrumbs
- 1 cup cheddar cheese grated
- 3 sheets rolled readymade puff pastry
- 6 tbs oil
- 2 tbs sage or Oregano or Thyme finely chopped
- Salt and Pepper to taste
- 2 tbs brown rice miso or soy sauce
- 4 tsp mustard
- 2 eggs lightly beaten
Directions
- After chopping up the mushrooms/vegetables finely (you can use a food processor). Cooking the vegetables first, add half the oil to a pan, we are sweating them to remove the water from them, add a pinch of salt.
- Sauté the leeks or diced onions and garlic, fry these gently over a medium heat to soften and brown them. Add the herbs and mustard and set aside to cool once finished.
- Heat the oven to 200C/180C fan or turn on the Air fryer to180C. Combine the mushroom/vegetable mixture with the leeks/onions in a bowl, add the chestnuts, cheese and breadcrumbs to suit.
- Season lightly the mixture to taste (miso and leeks will add salt). Continue to mix everything together until the filling is a slightly stodgy mixture. Firm but not too wet, allow it too cool.
- Remove the puff pastry and allow it to get to room temperature, or roll out the pastry on a flat surface, so each side measures about 30cm.
- Place the filling mixture down the center of the pastry, wrap the pastry around the mixture, sealing the edges with a fork.
- Cut the sausage roll into 8 or 10 pieces. Lay it flat on a lined baking sheet and brush each one with the beaten egg. Bake in the oven for 25-30 mins until deep, golden brown (air fryer may take a shorter time). Allow to cool a little before eating or storing it in a container.
Pork and Vegetable Sausage Rolls

Ingredients
- 1kg Pampas Frozen Puff Pastry Sheets, thawed
- 500g minced pork
- 1 onion, finely chopped
- 1 carrot, finely grated
- 1 celery stalk, finely chopped
- 1 tablespoon dried sage
- 1 teaspoon ground black pepper
- 1/2 teaspoon salt
- 1 egg, beaten
Directions
- Preheat the oven to 200°C (400°F).
- Combine the minced pork, onion, carrot, celery, sage, black pepper, and salt in a large bowl. Mix well.
- Roll out the puff pastry on a floured surface to a rectangle about 1/4 inch thick (2 or 3 sheets).
- Divide the meat mixture evenly along the centre of the pastry.
- Fold the sides of the pastry over the filling, then cut the pastry into strips.
- Twist each strip to seal the filling.
- Place the sausage rolls on a baking sheet lined with parchment paper.
- Brush the sausage rolls with the beaten egg.
- Bake for 20-25 minutes, or until golden brown and crispy.
- Let cool slightly before serving.
