Sheer Khurma Dessert Tips
- For a richer flavour, use full-fat milk. Semi-skimmed milk works too, but the dessert will be less creamy.
- Adjust the sweetness to your taste. Start with 150g of caster sugar and add more if needed.
- Soak raisins in warm water for 15 minutes before adding them. This plumps them up.
- Saffron is optional but adds a beautiful golden colour and a delicate floral aroma.
- Garnish with chopped nuts and a sprinkle of rose petals for an extra special touch.
Ingredients
100g Vermicelli, broken into 5cm pieces
1 litre Full-fat milk
200g Caster sugar
100g Mixed nuts (almonds, pistachios, cashews), finely chopped
20g Whole medium-sized raisins
10 Cardamom pods, lightly crushed
2 Bay leaves
Pinch of Saffron (optional)
2 tablespoons Rosewater
2 tablespoons Ghee
Directions
- Heat the Ghee in a large saucepan over medium heat.
- Add the vermicelli and fry for a few minutes, stirring constantly, until golden brown.
- Pour in the milk and slowly bring to a boil. Reduce heat and simmer for 10 minutes until the vermicelli is cooked and the milk thickens slightly.
- Add the sugar, cardamom pods, and bay leaves.
- Stir to combine and simmer for another 5 minutes.
- Stir in the rosewater, raisins, and chopped nuts.
- Simmer for an additional 2-3 minutes or until the raisins are plump and the nuts are heated through.
- If using Saffron, add it in now and stir well.
- Remove from the heat and let it cool slightly before serving.
- Serve warm or at room temperature, garnished with additional chopped nuts and rose petals (optional).
