Sheer Khurma | Sweet Dessert

Sheer Khurma is a delectable dessert that has its roots in South Asia and is especially cherished during the Eid al-Fitr festivities.
The name is derived from the Urdu and Hindi words for “milk stew,” this dish is a perfect blend of sweetness and comfort. This dessert is made from thin noodles, nuts, and dried fruit, offering a delightful taste experience.
Whether you’re celebrating Eid or simply looking for a delectable treat to indulge in, Sheer Khurma is the ideal choice for all the family. 

Sheer Khurma Dessert Tips

  • For a richer flavour, use full-fat milk. Semi-skimmed milk works too, but the dessert will be less creamy.
  • Adjust the sweetness to your taste. Start with 150g of caster sugar and add more if needed.
  • Soak raisins in warm water for 15 minutes before adding them. This plumps them up.
  • Saffron is optional but adds a beautiful golden colour and a delicate floral aroma.
  • Garnish with chopped nuts and a sprinkle of rose petals for an extra special touch.

Ingredients

100g Vermicelli, broken into 5cm pieces
1 litre Full-fat milk
200g Caster sugar
100g Mixed nuts (almonds, pistachios, cashews), finely chopped
20g Whole medium-sized raisins
10 Cardamom pods, lightly crushed
2 Bay leaves
Pinch of Saffron (optional)
2 tablespoons Rosewater
2 tablespoons Ghee

Directions

  1. Heat the Ghee in a large saucepan over medium heat.
  2. Add the vermicelli and fry for a few minutes, stirring constantly, until golden brown.
  3. Pour in the milk and slowly bring to a boil. Reduce heat and simmer for 10 minutes until the vermicelli is cooked and the milk thickens slightly.
  4. Add the sugar, cardamom pods, and bay leaves. 
  5. Stir to combine and simmer for another 5 minutes.
  6. Stir in the rosewater, raisins, and chopped nuts. 
  7. Simmer for an additional 2-3 minutes or until the raisins are plump and the nuts are heated through.
  8. If using Saffron, add it in now and stir well.
  9. Remove from the heat and let it cool slightly before serving.
  10. Serve warm or at room temperature, garnished with additional chopped nuts and rose petals (optional).
