Carrot and Brussel sprouts are a classic side dish often served during holidays or special occasions. While they might seem simple, there’s a lot you can do to improve these humble veggies. Glazing them adds a lovely sweetness and shine, making them more appealing even to those who aren’t big fans of vegetables.
One of the great things about this recipe is that you can easily adapt it to your taste. Glazed Carrot and Brussel Sprouts Tips
- Use fresh carrot and Brussel sprouts for the best flavour. Avoid soft or yellowing sprouts.
- Make sure the carrot and brussel sprouts are roughly the same size so they cook evenly. Slice larger sprouts in half or quarters.
- Don’t overcook the vegetables. You want them to have a bit of a bite.
- Stir the vegetables occasionally while cooking to prevent them from sticking to the pan.
- Adjust the amount of honey, syrup or sweetener to suit your taste.
- Add a little knob of butter to the glaze for richness and shine.
Ingredients (Serves 4)
- 500g Carrots, peeled and sliced into 1cm rounds.
- 500g Brussel sprouts, trimmed and halved (or quartered if large).
- 2 tbsp Olive oil.
- 2 tbsp honey, maple syrup, or sweetener of choice.
- 1 tbsp butter (optional).
- 1/2 tsp salt.
- 1/4 tsp black pepper.
Directions
- Preheat your oven to 200°C (180°C fan).
- In a large bowl, toss the carrot and Brussel sprouts with olive oil, salt and pepper.
- Spread the vegetables in a single layer on a baking tray.
- Roast in the preheated oven for 20-25 minutes or until the vegetables are tender and slightly browned.
- While the vegetables are roasting, prepare the glaze. In a small saucepan, melt the butter (if using) over medium heat.
- Add the honey or maple syrup and stir until combined.
- Once the vegetables are cooked, remove them from the oven and transfer them to a serving dish.
- Pour the glaze over the vegetables and toss gently to coat.
- Serve immediately.
