Ingredients
- 395g can sweet condensed milk
- 2 cups sweet coconut flakes
- 2 tbs butter (or coconut butter)
- 1 tsp of vanilla extract
- 1 egg yolk (optional) to make the flavour richer and brighter in colour
Directions
- Pour the sweet condensed milk into a saucepan and then warm over a low heat, adding a tbs of butter, stir the mixture constantly so it doesn’t burn. Allow the condensed milk to simmer and cook until thickened (or reduced by half).
- Once the mixture has thickened, remove it from the heat, keep stirring and add a cup of coconut flakes and the vanilla extract, once it is mixed well set it aside to cool.
- Lightly grease a bowl with the remaining butter.
- When the fudge is cool enough to handle, transfer it into the bowl and place in the fridge for 1 hour.
- Shred the remaining sweet coconut flakes in a blender, when they are finely chopped spread them onto a flat plate.
- Once the fudge is considerably firmer and cool throughout, you can remove it from the fridge.
- We can now start to form our balls, butter a tbs and use this to scoop out the fudge from the bowl, rolling each scoop firmly with your hands into balls.
- Roll the fudge balls into the finely chopped coconut, until they are entirely covered.
- You can place your Coconut Kisses into a small paper cady cup or on a desert platter, ready to be served to family and friends.
