Banana and Mars Bar Muffin Recipe – Tips
- Be careful not to burn yourself on the melted Mars Bars straight out of the oven.
- You can use pitted dates and stoned fruit and 100g raw chocolate chips, if you do not want to use Mars Bars.
- Serves: 12 muffins
- Prep Time: 20mins
- Cooking Time: 25mins
Ingredients
- 4 Mars Bars, cooled
- 3 medium bananas, well ripened
- 250g self raising flour, sifted
- 120g caster sugar or 120g honey
- 75g butter, melted or 75ml coconut oil
- 125ml full cream milk or Almond milk
- 2 medium eggs, beaten
- 1 tsp baking powder
- 1 tsp honey
- 1/2 tsp bicarb of soda
- 1/2 tsp cinnamon
- 1/2 tsp nutmeg
- 1 tsp vanilla extract
Directions
- Preheat oven to 190C.
- In a bowl mash the ripened bananas with a fork, until there are no lumps or large chunky pieces.
- Sift the flour into a large bowl and combine all the dry ingredients, mixing it through well. Add the wet ingredients to the mashed bananas and stir in well, ensure the melted butter is cooled before adding.
- Create a well in the centre of the dry ingredients and transfer the wet mixture and combine well. Mix with a fork, allowing it to remain slightly chunky with little morsels of banana.
- Add the chopped Mars bar to the mixture and stir through well, trying to ensure that the bars don’t stick together. You can use dates instead of Mars Bars here.
- Grease a muffin tin well (or use muffin cases/cups) and split the mixture evenly. Making sure you have a Mars Bar chunk in each muffin.
- Place the tin in the warm oven for 25mins until brown (inserting a knife into the muffin it comes out clean).
- Remove from oven when ready, allow to cool for 5-10mins before removing them from the tin.
