Cowboy Casserole Recipe

These classic cowboy casserole recipes are so simple to make and an absolute hit with the children! Great for big groups of people and very economical. A real winner in the winter, great to serve on Halloween or around a campfire or garden fire pit. Wrap up in a blanket nice and warm on the outside and this cowboy casserole will warm you on the inside!

Cowboy Casserole w/ Pork Sausages Recipe

Cowboy Casserole | Tips

  • If you like barbecue flavor, put in some barbecue sauce or marinade to lift the dish.
  • You can put extra vegetables in, such as courgettes/zucchini to give a little more crunch.
  • Recipe Serves: 4
  • Recipe Cooking Time: 30 minutes
  • Recipe Preparation Time: 10 minutes

Ingredients

  • 12 good quality pork sausages (try to get flavored ones as well as plain pork)
  • 2 medium-sized onions, chopped
  • 4 sticks of celery, chopped
  • 2 strips of bacon, chopped
  • 400 grams/14 oz. (one can) of chopped tomatoes
  • 300 ml/ 10 fl. oz of beef stock (you can use stock cubes for this)
  • 1 tbsp of runny honey or maple syrup
  • 1 tbsp of Worcestershire sauce
  • 2 × 400 gram/ 2 × 14 oz. cans of baked beans
  • A little water to thin the mixture, if it starts to burn or is too thick
  • 1 tsp of smoked paprika or a little mild chili powder
  • 1-2 tbs of olive oil

Directions

  1. Lightly fry the sausages in the olive oil, turning occasionally to brown, or you can grill them if preferred. Set aside in a heatproof casserole dish or stockpot-sized pot.
  2. Add a little more oil and gently fry the onions, bacon, and celery until soft and cooked. Cut the sausages in half with a diagonal cut.
  3. Put the sausages, bacon, onions, and celery into the casserole dish/stockpot and tip in the chopped tomatoes, beans, Worcestershire sauce, and honey/syrup. Pour in the stock and paprika/chili powder and stir thoroughly.
  4. Heat all of the mixtures over low heat, stirring to prevent burning or sticking, as the beans will burn if they stick to the bottom of the pot. Do not let it boil, just simmer for about 10 minutes until the liquid has reduced and the flavors have mingled. You could also put the casserole dish into the oven if you have a lid, or cover the top in foil for about 30 minutes at 150 C/300 F/ Gas mark 2.
  5. Serve with mashed potato or baked potatoes or even some delicious warm crusty bread.

  • Recipe Serves: 6
  • Recipe Cooking Time: 25 minutes
  • Recipe Preparation Time: 15 minutes

Ingredients

  • 500 g of quality beef mince
  • 2 hash browns, torn up
  • 2 medium-sized onions, chopped
  • 2 cloves garlic, chopped
  • 4 sticks of celery, chopped
  • 2 strips of bacon, chopped
  • 1 125g can of corn kernels
  • 400 grams tomatoes diced
  • 150 g sour cream
  • 2 cups of cheese
  • 300 ml beef stock (you can use stock cubes for this)
  • 1 tbsp of runny honey or maple syrup
  • 1 tsp of smoked paprika or a little mild chili powder
  • 1/2 tsp of cumin
  • 1-2 tbs of olive oil

Directions

  1. heat a frying pan over a medium heat Add oil, cook onions until they are soft and slightly translucent.
  2. Add beef and bacon, fry until beef is drained and starting to brown slightly. Push meat and onions to outer edge of skillet.
  3. Add the garlic, paprika or chili powder and cumin. Stir and cook until garlic is fragrant, for about 2 minutes.
  4. Add celery, corn, tomatoes, sour cream, honey and 1 cup cheese to the mixture, stirring through regularly, until cheese is melted and sour cream is incorporated, season to taste and add stock if necessary.
  5. Transfer the mixture into a baking dish, top with hash browns and sprinkle with remaining cheese.
  6. Bake in a preheated oven at 190C for 25 minutes, or until the cheese is melted and hash browns are golden.
  7. Garnish with parsley and serve with mashed potato or baked potatoes or even some delicious warm crusty bread.
