Delicious Cheese and Vegemite Scrolls

Originally created as a playful variation on traditional recipes, Vegemite scrolls have become a firm favourite in family households across the country. The combination might initially sound unusual, but it’s sure to surprise and delight your taste buds. Whether you’re a die-hard Vegemite fan or a cheese lover looking to expand your snacking horizons, these scrolls offer a unique and delicious experience.

 Cheese and Vegemite Scrolls Tips

  • For a richer flavour, use a strong cheddar cheese like Red Leicester.
  • Feel free to adjust the amount of Vegemite to your taste. Start with a thin layer and add more if desired.
  • Brush the tops of the scrolls with a little milk before baking for an extra golden finish.
  • These scrolls freeze well! Once baked and cooled, pop them in an airtight container and freeze for up to 3 months. Reheat in a warm oven for a few minutes until warmed through.
  • If you cannot get Vegemite, you can replace it with Marmite or Promite instead.

Ingredients

175g self-raising flour
Pinch of salt
50g cold butter, cubed
125ml milk
1-2 tablespoons Vegemite
150g grated mature cheddar cheese

Directions

  1. Preheat your oven to 220°C (428°F) and line a baking tray with baking paper.
  2. Sift the flour and salt into a large bowl. Rub the cubed butter into the flour using your fingertips until the mixture resembles breadcrumbs.
  3. Make a well in the centre of the dry ingredients and pour in the milk. Gently mix with a spoon or your fingers until a soft dough forms. Be careful not to overmix.
  4. Turn the dough out onto a lightly floured surface and knead for a few minutes until smooth. Roll out the dough into a rectangle roughly 30cm x 20cm.
  5. Spread a thin layer of Vegemite over the dough, leaving a 1cm border around the edge. 
  6. Sprinkle the grated cheese evenly over the Vegemite.
  7. Starting from a long edge, roll up the dough tightly to form a sausage roll shape. Pinch the seam to seal the contents.
  8. Using a sharp knife, cut the roll into slices approximately 3 cm thick. 
  9. Place the scrolls cut-side up on the prepared baking tray, leaving a little space between each one.
  10. Bake for 15-20 minutes or until golden brown and puffed through.
  11. Remove from the oven and allow to cool slightly before serving. It is best to enjoy them at warm or room temperature.
