Creamy Garlic Prawns in White Wine and Parmesan

Ingredients

  • 1kg large/medium prawns, peeled and deveined
  • 2 tablespoons olive oil
  • 8 garlic cloves, finely chopped
  • 240ml dry white wine
  • 120ml heavy cream
  • 60g grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley, chopped, for garnish

Directions

  1. Prepare the prawns: Season the prawns with salt and pepper and set them aside.
  2. Sauté the garlic: Heat olive oil in a large pan over medium heat. Add the chopped garlic and cook for 30 seconds, being careful not to let it burn.
  3. Cook the prawns: Add the prawns to the pan and cook for about 2 minutes on each side until they turn pink and are fully cooked.
  4. Make the sauce: Remove the prawns from the pan and set aside. Pour the white wine into the pan and stir, scraping up any bits stuck to the bottom. Simmer until the wine reduces by half, about 3-4 minutes.
  5. Add cream and Parmesan: Stir in the cream and Parmesan cheese, and let the sauce cook for another minute until it thickens slightly.
  6. Serve: Return the prawns to the pan, mix them into the sauce, and garnish with fresh parsley. Serve immediately with bread, pasta or rice.
