#1 Matcha Cookies

Yields approximately 15-18 cookies 

Ingredients

  • 150g plain flour
  • 50g matcha powder
  • 100g unsalted butter, softened
  • 100g granulated sugar
  • 1 large egg
  • 1 tsp baking powder
  • A pinch of salt
  • Optional: White chocolate chips (100g)

Directions

  1. Preheat your oven to 180°C (350°F) and line a baking tray with parchment paper.
  2. In a large mixing bowl, cream the softened butter and sugar together until light and fluffy.
  3. Beat in the egg until well combined.
  4. In another bowl, sift together the plain flour, matcha powder, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined. 
  6. If using, fold in the white chocolate chips.
  7. Scoop tablespoon sized amounts of dough onto the prepared tray, leaving space between each.
  8. Bake for 10-12 minutes or until the edges are lightly golden. 
  9. Let them cool on a wire rack.

#2 Matcha Cheesecake

Yields one whole cheesecake, serving approximately 8 to 10 slices.

Ingredients

  • 200g digestive biscuits, crushed
  • 100g unsalted butter, melted
  • 400g cream cheese, softened
  • 100g granulated sugar
  • 2 large eggs
  • 2 tbsp matcha powder
  • 200ml double cream
  • 1 tsp vanilla extract

Directions

  1. Preheat your oven to 160°C (320°F) and line the base of a springform tin with baking paper.
  2. In a bowl, mix the crushed digestive biscuits with the melted butter until well combined. 
  3. Press this mixture firmly into the base of the tin to form a crust.
  4. In a large bowl, beat the cream cheese and sugar until smooth. Add the eggs one at a time, mixing well after each addition.
  5. Sift in the matcha powder and add the double cream and vanilla extract. 
  6. Mix until everything is combined and smooth.
  7. Pour the cheesecake mixture over the biscuit base and smooth the top. 
  8. Bake for 45 minutes or until set. Turn off the oven and let the cheesecake cool inside for an hour.
  9. Chill in the fridge for at least four hours before serving.

#3 Matcha Ice Cream

The recipe provided will yield approximately 1.5 litres of matcha ice cream once churned.

Ingredients

  • 300ml double cream
  • 200ml whole milk
  • 100g granulated sugar
  • 4 large egg yolks
  • 2 tbsp matcha powder
  • A pinch of salt

Directions

  1. In a saucepan, heat the milk and half of the sugar over medium heat until warm, but do not boil.
  2. In a separate bowl, whisk together the egg yolks and the remaining sugar until pale and thick.
  3. Gradually pour the warm milk into the egg mixture, whisking constantly to temper the eggs.
  4. Pour this mixture back into the saucepan and cook on low heat until it thickens slightly and coats the back of a spoon.
  5. Remove from heat and sift in the matcha powder, stirring until well combined. 
  6. Add a pinch of salt to enhance the flavours.
  7. Pour the mixture into a bowl and let it cool to room temperature, then stir in the double cream.
  8. Chill in the fridge for at least two hours, then churn in an ice cream maker according to the manufacturer’s instructions.
