Ingredients
- 3 medium zucchini, sliced into 1cm thick rounds
- 1 tbsp olive oil
- ½ tsp garlic powder
- ½ tsp dried oregano
- ½ tsp salt
- ¼ tsp black pepper
- 50g freshly grated Parmesan cheese
- 1 tbsp chopped parsley (optional, for garnish)
Directions
- Preheat your oven to 200°C (180°C fan forced).
- Line a baking tray with baking paper.
- In a large bowl, toss the slices with olive oil, garlic powder, oregano, salt and black pepper until evenly coated.
- Arrange the slices on the prepared tray in a single layer.
- Sprinkle the grated Parmesan generously over the top of each slice.
- Bake in the oven for 15-20 minutes or until the zucchini is tender and the Parmesan is golden and crispy.
- Remove from the oven and let it cool slightly. Garnish with chopped parsley, if desired, before serving.
