Zucchini Slice Recipe Tips
- This recipe can be stored in the fridge in an airtight container for up to five days. It is also fine to be frozen for up to 3 months.
- Drain the moisture from the zucchini before adding it to your mixture. Place the grated zucchini in a clean tea towel or paper towel, squeeze out as much water as possible.
- The size of oven tray you use will make a difference. If you use a larger tray it will result in a much thinner Zucchini slice.

Ingredients
- 3 zucchini, grated
- 1 carrot, grated
- 1 sweet potato, grated
- 1/2 cup (60g/4 oz) corn (fresh or tinned)
- 1/2 capsicum, diced
- 1 cup (130g/8 oz) self-raising flour (use wholemeal flour if you want a healthier recipe)
- 3 bacon rashers diced (you could substitute bacon with salami or chorizo for something a bit spicy)
- 6 eggs, lightly beaten
- 1 1/2 cups (200g/12 oz) cheese, grated
- 1/4 cup (30g/2 oz) parmesan cheese (you could substitute parmesan for some crumbled feta or ricotta)
- 1 onion or leek, diced
- 1 tomato, sliced
- 1 tbs butter
- salt and pepper to season
- 1tsp dried herbs (basil, Italian herbs or parsley)
Directions:
- Pre-heat the oven to 180°C/360°F.
- Cook the bacon and onion in the tbs butter over a medium heat in a frying pan. Add capsicum and allow to cook until soft.
- Remove excess liquid from grated zucchini.
- In a large bowl combine the flour, cheeses, and eggs and stir through the grated sweet potato and zucchini, corn and carrot.
- Add the bacon, capsicum and onion and pour into a greased oven tray.
- Top with slices of tomato, dried herbs and season well.
- Place in the oven for 30-40 minutes or until lightly browned on top.
Allow to cool slightly before cutting and enjoy with a side serve of salad and a tomato relish.
Zucchini Slice Recipe in the Thermomix
- Preheat oven to 180C/360F.
- Place the bacon, sweet potato, carrot, zucchini, onion and cheese into the Thermomix bowl. Grate on Speed 10, for 10 seconds. Scrape down the sides of the bowl and repeat process.
- Add the eggs, self raising flour, salt and pepper, corn and remaining ingredients and mix on Reverse, Speed 3 until combined, remembering to scrape down the sides occasionally.
- Pour the mixture into a greased oven tray, season well and top with sliced tomato then cook for 30-40 minutes or until brown on top.
Gluten free Zucchini Slice Recipe
To make this recipe gluten free swap out the flour for a coconut, chick pea or rice flour, or use a good gluten-free flour if you prefer. Some recipes even leave the flour out altogether.
Keto Zucchini Slice Recipe
For a Keto Zucchini slice you can swap out the butter for coconut oil and use a coconut or almond flour or just leave the flour out if you prefer and add extra cheese.
Vegetarian Zucchini Slice Recipe
For a Vegetarian Zucchini slice leave out the bacon and add chick peas if you prefer or even add some sundried tomato.
Egg free Zucchini Slice Recipe
For an egg free Zucchini slice substitute egg with a cup of rice milk or almond milk and half a cup of coconut, vegetable or olive oil.
