Pork and Pineapple Stir Fry – Sweet and Savoury

This recipe brings together pork and pineapple for a well balanced mix of sweet and savoury flavours. Stir fries are a great way to make a meal using whatever vegetables and protein you have on hand, making them both practical and delicious.

Pork and Pineapple Stir Fry Tips

  • Prepare everything before cooking. Stir fries cook quickly, so have all your ingredients chopped and ready.
  • Cut pork into even sized pieces. This helps it cook evenly and stay tender.
  • Use high heat. A hot wok or pan gives the pork a nice sear and keeps the vegetables crisp.
  • Do not overcrowd the pan. If necessary, cook in batches to avoid steaming the ingredients.
  • A wok is ideal, but a large frying pan works too. If using a pan, make sure it has enough space to toss the ingredients properly.

Ingredients (Serves 4)

  • 400g pork loin or shoulder, cut into thin strips
  • 1 tbsp cornflour
  • 2 tbsp soy sauce
  • 1 tbsp honey
  • 1 tbsp oyster sauce
  • 1 tsp sesame oil
  • 1 tbsp vegetable oil
  • 1 onion, sliced into thin wedges
  • 1 red capsicum, sliced into strips
  • 1 green capsicum, sliced into strips
  • 2 cloves garlic, finely chopped
  • 2cm piece ginger, finely grated
  • 200g fresh pineapple, cut into bite sized chunks (or drained tinned pineapple)
  • 2 tbsp water
  • 1 spring onion, chopped finely  (for garnish)
  • Cooked rice or noodles, to serve

Directions

  1. Prepare the sauce. In a small bowl, mix the soy sauce, honey, oyster sauce, and cornflour. Set aside.
  2. Heat the pan. Place a wok or large frying pan over high heat. Add vegetable oil.
  3. Cook the pork.  Add pork strips and stir fry for 3–4 minutes until browned. Remove and set aside.
  4. Cook the vegetables. In the same pan, add onion and capsicums. Stir fry for 2–3 minutes until slightly softened.
  5. Add garlic and ginger. Stir fry for another minute until fragrant.
  6. Add pineapple. Toss in the pineapple chunks and stir fry for 1 more minute.
  7. Return the pork. Add the pork back into the pan. Pour in the sauce and water, stirring well. Cook for 1–2 minutes until the sauce thickens.
  8. Serve. Sprinkle with chopped spring onion and serve immediately with rice or noodles.
