Delicious Pulled Pork Sandwich with Coleslaw Recipe

Pulled pork is a popular dish that originates from South American, the pulled pork sandwich was created in American barbecue meat culture, its roots are based in the southern United States, where slow-cooked meats are a regional speciality. Pulled pork is made by slowly cooking pork until it becomes tender enough to shred or “pull” apart. This sandwich combines the tender and juicy pork with a crunchy zesty coleslaw. It gives a balance of flavours and textures.

Pulled pork sandwiches have become a favourite around the world, often served at backyard barbecues and casual get-togethers. Pulled Pork Sandwich Tips

  • Choose the proper cut. Opt for pork shoulder or pork butt. They have enough fat to stay moist during long slow cooking.
  • Season generously. Season the pork well with salt, pepper, and a barbecue rub for maximum flavour.
  • Use a dry rub. A dry rub adds more flavour to the pork as it cooks.
  • Keep the fat cap. Leave the fat cap on the pork to help keep it moist during cooking.
  • Cook the pork on low heat until it’s fall-apart tender, which may take 8-12 hours in a slow cooker or smoker. 
  • Use a thermometer: Check the pork’s internal temperature. It’s done when it reaches 195°F (90°C).
  • Let it rest: Rest the cooked pork to allow the juices to redistribute before shredding.
  • Shred the pork into bite-sized pieces using two forks. 
  • Toss the shredded pork with barbecue sauce for extra flavour.
  • Serve on soft buns or thick toasted slices of bread. Serve the pulled pork on fresh buns with your favourite toppings like coleslaw, pickles, or onion rings.
  • Cabbage, you can use normal cabbage or you can use red cabbage and combine the 2 together.

Ingredients

Yield: This recipe will serve 4-6 sandwiches using medium buns.

For the Pulled Pork:
  • 1 kg pork shoulder, trimmed of excess fat
  • 1 tbsp olive oil
  • 1 large onion, chopped finely
  • 3 cloves garlic, minced
  • 1 cup barbecue sauce
  • 1/2 cup chicken stock
  • 1 tbsp brown sugar
  • 1 tsp smoked paprika powder
  • 1 tsp salt
  • 1/2 tsp black pepper
For the Coleslaw:
  • 1/4 cabbage, shredded thinly (normal or red cabbage)
  • 1 medium carrot, grated
  • 1/4 cup mayonnaise
  • 1 tbsp apple cider vinegar
  • 1 tsp sugar
  • Salt and pepper to taste
To Serve:
  • 4-6 soft medium buns or sliced toasted bread.

Directions

Prepare the Pulled Pork:
  1. Rub the pork with olive oil, salt, pepper, and smoked paprika. 
  2. In a large pot, heat a bit of oil over medium heat, then sear the pork on all sides until brown. 
  3. Add chopped onion, minced garlic, barbecue sauce, chicken stock, and brown sugar to the pot.
Cook the Pork:
  1. Reduce the heat to low, cover the pot, and let it simmer for 3-4 hours or until the pork is very tender. 
  2. Check every hour, and add a little more stock if needed to keep it moist.
  3. If using a slow cooker, transfer the pork to the slow cooker. Add the chopped onion, minced garlic, barbecue sauce, chicken stock, and brown sugar.
  4. Cover and cook on low for 8-10 hours or on high for 4-5 hours, until the pork is very tender and easily shreds with a fork.
Shred the Pork:
  1. Once cooked, remove the pork from the pot and use two forks to shred it into pieces. Return the shredded pork to the pot and mix with the fluids and sauce.
Make the Coleslaw:
  1. In a large bowl, combine shredded cabbage and grated carrots. 
  2. Mix mayonnaise, apple cider vinegar, sugar, salt, and pepper in a separate bowl. 
  3. Pour the dressing over the cabbage mix and toss until well coated.
Assemble the Sandwich:
  1. Slice the buns open or take 2 thick sliced pieces of toasted bread. 
  2. Place a generous portion of pulled pork on the bottom half, top with coleslaw, and add the top bun. Serve warm and enjoy!
