Singapore Special Fried Rice Recipe – Tips
- Day old cold rice is ideal for making this Singapore special fried rice recipe. Cook the rice one day ahead or use leftover cooked rice.
- If you are cooking for a party, this dish can be cooked in batches if needed.
- Do not over crowd the fry pan with the ingredients.
- To make it a vegetarian meal, use tofu instead of meat or fish.

Ingredients:
- 250g long grain or basmati rice
- 100g spring onions, thinly sliced
- 4 cloves garlic, thinly sliced
- 1 cup cai xin, (cabbage) finely chopped
- 1 cup carrots, shredded
- 1 cup okra, thinly sliced
- 1/2 cup bean sprouts
- 1/2 cup string beans, chopped
- 2 eggs, whisked
- 200g prawns or crab meat, chopped
- 100g squid or octopus, chopped
- 100g white fish, roughly chopped
- 1 tbsp rapeseed oil
- 3 tbs soy sauce
- 1/2 tbs curry powder
- 2 tsp chilli, thinly sliced
- 1 tsp ground ginger
- 1/2 cup fish stock or water
- salt and pepper to taste
Directions:

In a large wok or non-stick frying pan, add half of the thinly sliced spring onion into the pan along with the rapeseed oil. Season with salt and fry on a medium heat for a couple of minutes.
- Add the curry powder, chilli and garlic into the pan and fry for two minutes until fragrant.

Drain vegetables of any liquids, then add them into the pan. Cook for around 5 mins or until the veg is fully cooked, season generously with salt.
- Add the prawns, fish and squid, cook well until the liquid has disappeared.

Add the cooked rice into the pan and stir to combine. Form hole in the center of the pan and add the whisked eggs.

Scramble the eggs in the center for around a minute before mixing it with the other ingredients in the pan.

Add the soy sauce into the pan and stir to combine. Cook for another 2 minutes, then serve with a sprinkle of the reserved spring onion and an optional sprinkle of chillies.
Spanish Style Fried Rice Recipe
This Spanish style fried rice dish is reminiscent of a Spanish paella style fried rice recipe but not using risotto or carnaroli rice, just simple quick-cook rice, which is then fried after being cooked, so you can use up ready-cooked rice if you have it.
Spanish Style Fried Rice Recipe – Tips
- If you have any leftover chicken or maybe some cooked prawns, add these at the last minute and heat through for another dimension to your dish.

Ingredients:
- 800g/2lbs long grain rice
- 2 tsp of turmeric or a few saffron strands
- 3 mixed peppers (red, green and yellow), sliced
- 1 large red onion, diced
- 1 cup cooked green beans, chopped
- 1 tsp paprika
- 1 chorizo sausage, chopped approx. 20cm/8in
- 1 can beans, borlotti, kidney beans or black eyed beans
- Olive oil for frying
- 1 tsp dried oregano
Directions:
- Put the rice into a large saucepan ” one cup of water per one cup of rice. (If you have cooked rice already prepared, follow the instructions from later in the recipe).
- Add the turmeric or saffron and stir.
- Bring the rice up to boiling, stir and leave for about one minute, then turn off the heat, stir the rice, place a lid on the top, and let the rice continue to cook and absorb the liquid for approx. 15mins.
- When all the liquid has gone, test the rice ” it should be soft, but a little bite in it is fine. If it is not cooked, add some more liquid and bring back up to the boil, then turn off the heat again. Drain, rinse and leave to one side.
- Put a little olive oil into a frying pan and soften the onions on low heat. Put in the peppers and cook until slightly soft, then put in the chorizo. The chorizo has an oily texture, so the colour will run out and make a lovely ‘yellowy-red’ colour. Make sure you stir continuously to prevent burning.
- Put the green beans and rice into the pan to reheat, stir and then add the tinned beans. If the mixture is a little dry, add a little more olive oil.
- Add the dried oregano, or fresh if you have it, stir well. Your dish is ready to serve.
