  • 500g (2 pints) cherry tomatoes, halved
  • 1 red onion, finely chopped
  • ½ cup (30g) fresh parsley, chopped
  • ½ cup (30g) fresh mint, chopped
For the dressing:
  • ½ cup (120ml) olive oil
  • 4 tbsp lemon juice
  • 2 cloves garlic, crushed
  • Salt and black pepper to taste

Directions

  1. Place the couscous in a large bowl. Pour the boiling water over it, then add olive oil and salt. Stir well, cover with a lid, plate or cling wrap, and let it sit for 5 minutes.
  2. Fluff the couscous with a fork to separate the grains. Allow it to cool slightly.
  3. Add the cucumber, red bell pepper, cherry tomatoes, and red onion to the couscous. Stir gently to combine.
  4. In a small bowl, whisk together olive oil, lemon juice, garlic, salt, and black pepper to make the dressing.
  5. Pour the dressing over the couscous mixture and toss well to coat everything evenly.
  6. Add the chopped parsley and mint, then stir again.
  7. Taste and adjust the seasoning if needed. Serve immediately or chill for 30 minutes before serving for better flavour.
